"Even Duke Ellington wrote a piece about a Spanish bullfighter! However, I am pretty sure that Desperdicios is the very first anti-bullfighting pasodoble in music history. Manuel Domínguez, aka Desperdicios (Waste), was one of the most famous early 19th century matadors. The legend around him tells that he got his nickname when a bull took his eye out of its socket and he exclaimed: “Well, that’s just waste, anyway”. I believe this story shows, with brutal clearness, the spirit of violence and cruelty that inspires bullfighting".

"¡Hasta el mismo Duke Ellington escribió una pieza dedicada a un torero! Nosotros no hemos querido ser menos. Manuel Domínguez “Desperdicios” fue una famosísima figura del siglo XIX. Al parecer, le llamaron así cuando el toro arrancó de cuajo uno de sus ojos y él exclamó: “¡Bah, eso son desperdicios!”. Creo que esta escena ilustra con nitidez la atmósfera de violencia y crueldad de la fiesta. Posiblemente “Desperdicios” sea el primer pasodoble antitaurino de la historia".
